As I pondered what direction to go in next, it hit me: the answer is in your own backyard! Not literally, but close: Beecher’s. The Holy Grail of Cheese. And by extension, Mac & Cheese. Oh yes.

Beecher’s macaroni and cheese has long been touted the “World’s Best“, and they have awards to back this up. They opened in the heart of Seattle’s Pike Place Market back in November of 2003 and have taken the cheese world by storm ever since. So naturally, it just makes sense to try out the “World’s Best” Mac & Cheese for myself!

I tried to make it as healthy as possible, considering that the recipe calls for butter and cheeses. I went with a multigrain penne pasta (love Barilla) and fat-free milk. And did I mention the luscious Beecher’s cheeses?

Yep, there they are! Beecher’s Flagship and Just Jack cheeses. It took all of my willpower not to eat them both whole. And it took even more of my willpower not to eat fistfuls of them once they were grated!

Onward to the recipe. Once the cheeses were grated I measured out the butter,

Melted it in a pan and whisked in the flour. After whisking and cooking for a little while, I added the milk (while continuing to whisk) and then cooked and whisked the sauce until it thickened. Once thickened, I removed the pan from the heat and added in the cheeses and spices.

After everything was incorporated and happy, I set the pan aside. I cooked the penne for two minutes less than called for on the package instructions, then rinsed it under cool water and drained it. I sprayed an 8×8 baking dish with cooking spray and set the oven for 350 degrees.

Next came the step where the magic happens.

I combined the penne and the sauce, stirring gently until everything was combined. The mac and cheese was then loaded into the baking dish and covered with a generous sprinkle of the remaining cheeses and some chili powder. I baked it for twenty minutes and practiced active patience while it rested, out of the oven, for an additional five minutes.

The end result? Five out of five elbows for this recipe, it was knock-it-out-of-the-park amazing! The addition of the chipotle chili powder instead of the usual dried mustard was stellar. It really made the dish sing and added a lovely little zing at the end of each bite. I could eat this for a week and still want more…it is indeed that good.

Beecher's "World's Best" Mac & Cheese, adapted from Beecher's
Ingredients
  • SAUCE
  • 2 tablespoons butter
  • 3½ tablespoons flour
  • 1½ cups fat-free milk
  • 7 ounces Beecher's Flagship cheese, grated
  • 1 ounce Beecher's Just Jack cheese, grated
  • ½ teaspoon coarse sea salt
  • ½ teaspoon chipotle chili powder
  • ½ teaspoon garlic powder
  • PASTA
  • 6 ounces multigrain penne pasta
  • 1 ounce Beecher's Flagship cheese, grated
  • 1 ounce Beecher's Just Jack cheese, grated
  • ½ teaspoon chipotle chili powder
Instructions
  1. Heat oven to 350 degrees. Liberally Pam an 8x8 baking dish.
  2. Melt butter in a medium saucepan over medium heat. Once melted, whisk in flour and cook for two minutes.
  3. Slowly add the milk, whisking constantly. Cook the mixture, whisking frequently, until it thickens (about ten minutes).
  4. Once the sauce is thick, remove from heat and add the two cheeses, salt, chipotle chili powder and garlic powder. Stir until the cheese is melted and everything is combined, then set aside.
  5. In a large pot, boil water for the pasta. Once the water is at a rolling boil, add the penne and cook for two minutes less than instructed on the package. Drain, then rinse the pasta in cool water to arrest the cooking.
  6. Add the penne to the sauce and gently stir to combine.
  7. Load the mac and cheese into the baking dish and sprinkle the remaining cheeses and chipotle chili powder over the top.
  8. Bake, uncovered, for twenty minutes and allow the dish to rest for five minutes once out of the oven.
  9. Serve and scarf down immediately!

World’s Best, indeed.
